Our wines represent our commitment and indissoluble love for our land.
We cultivate the vineyards with that love with which parents grow children, recognizing their merits and working to enhance them to the fullest, in full respect of diversity.
All vineyards are set to produce Amarone wine. It’s only during the season that we will select grapes that will become Amarone and those for entry wines.
Harvest and drying
Our vineyards are situated in Cellore, hilly area, about 200 meters above the sea. Val d’Illasi (bigger area of production) is a wide and sunny valley; our soils are mainly alluvial, rich in stones and rocks, and are particularly suited for viticulture. Our main mission is to is to enhance the fruits of our land, respecting and caring for it to the fullest.
We care so much about the quality of our wines to select all best grapes only by hand.
Then it’s turn to dry grapes, an ancient traditional technique used for Amarone, that consist in partially dehydrating the grapes for 2-4 months before vinification, in order to concentrate their characteristics.
Vinification
We use wood only as a support for our wines and not as a predominant component.
Each type of grape will follow a different path, according to the wine it is destined for.
The soft pressing is a conscientious choice: the purpose of our work in the cellar is to preserve and protect the true essence of our grapes.
Our technologies allow us to control fermentation, thus enhancing the qualities and aromas of each wine.
Ageing
We use wood only as a support for our wines and not as a predominant component.
We decided to maintain the tradition to use only 225lt barrique to produce our wines.
