Determined, fragrant and elegant: our being Soave.
We, who have always been growers of red grapes, when we inherited a few hectares of white grapes from grandfather Giuseppe, did not know where to start. The first decision was to bring our method of growing red grapes to white grapes. It was a success!
90% Garganena and 10% Trebbiano di Soave.
The grapes are harvested by hand: a first part is placed in the fruit cellar for a slight withering, while the remaining part remains to ripen on the vine.
The musts we obtain, before fermentation, will be placed in tanks at 4°: we will therefore have a cleaner fermentation, with a better extraction of perfumes.
We then proceed with two separate fermentations, so as to be able to subsequently create the perfect blend.
8 months in steel complete the maturation before being bottled.
We define it as a very versatile product. Perfect as an aperitif on summer evenings, ideal for a fish or white meat and vegetable based dinner, excellent on Sundays with friends before lunch.
