For us, Valpolicella means land and tradition, with that personal nuance that makes it different. The workmanship makes it soft, but at the same time lively. Our vineyards are all in Cellore d'Illasi, an area that has always been suited to the cultivation of red grapes.
Corvina, Corvinone, Rondinella
Valpolicella comes only from fresh grapes to preserve the aromas and scents of the fruit. After fermentation it is left to rest in oak barrels for about 3 months, followed by processing in the cellar to make the tannins more velvety.
A wine that goes very easily with first and second courses, to be preferred with cured meats and young cheeses.
